The Hospital accounts books are used as source material, which allow us to approach the proposed aims. The farms were cultivated by tenants who delivered half of the crop to the Hospital, which paid half of the farming expenses. After taking away the tithe, the fruit provisions, the following year's seeds, and the Hospital's share from the gross produce of the cereal, tenants were left with about 33,30% of the crop. The crop alternation and the fertilization with livestock manure allowed to keep production throughout, with no remark of a trend to decreasing yields. Production rested on cereals (with a steady volume in the studied period), maize, onions, hemp and potatoes -the latter increased from the beginning of the 19th century. The seed yields were modest and they show no growing trend.
