<dim:field mdschema="dc" element="description" qualifier="abstract" lang="es">La trehalosa se encuentra frecuentemente en la naturaleza, en concreto Sacharomyces cerevisiae&#xd;
lo produce como sustancia de reserva. Se ha demostrado que este disacárido posee propiedades&#xd;
que suponen ventajas para las células de levadura, por ello, se ha realizado un estudio sobre la&#xd;
puesta en marcha de un método para determinar trehalosa y calcular su contenido en diversos&#xd;
tipos de levadura. Todo ello se llevó a cabo en una industria alimentaria productora de levadura&#xd;
de panadería, en Valladolid, a través del departamento de producción. Los resultados obtenidos se&#xd;
compararon con parámetros de suma importancia en los procesos de cultivo de Sacharomyces&#xd;
cerevisiae, como el contenido de nitrógeno, de melaza, o la producción de biomasa. Con los&#xd;
resultados y las observaciones realizadas sobre los procesos de cultivo y almacenaje, se observó&#xd;
que los valores obtenidos para la concentración de trehalosa eran coherentes, demostrando que&#xd;
el método cumple los objetivos previstos.</dim:field>
<dim:field mdschema="dc" element="description" qualifier="abstract" lang="es">Trehalose is a disaccharide which is often found in nature, specifically the&#xd;
Saccharomyces cerevisiae yeast produces it as a reserve substance. It has been&#xd;
demonstrated that this sugar has properties which means great advantages to yeast&#xd;
cells, therefore, a study has been made on the content of trehalose and the&#xd;
implementation of a method to determine it. It was performed by the production&#xd;
department, in a producing baker's yeast industry, in Valladolid. The results obtained&#xd;
were compared with other important parameters in the culture operation, as the&#xd;
nitrogen and molasses content, or the biomass production. With the results obtained&#xd;
and the observations made during the culture process and storage, it was observed&#xd;
that the trehalose concentration values obtained were consistent and it showed that the&#xd;
method meets the objectives set, and it is useful for trehalose determination in yeast.</dim:field>
