Fraccionamiento hidrotermal de zanahoria en planta piloto en ciclos y separación por membrana de ultrafiltración

El proyecto consiste en la revalorización de zanahorias descartadas, reduciendo así
el desperdicio y el impacto ambiental que genera su acumulación.
La pulpa es sometida a la extracción hidrotermal, obteniendo hemicelulosas y
pectinas. Se realiza a escala piloto con 5 reactores en ciclos, operando a 140°C y
180°C. Se estudia la influencia de operar en ciclos, el tiempo y la temperatura de
extracción. El rendimiento de extracción de arabinogalactanos fue 73.18 y 94.01 %,
y para las pectinas 9.09 y 8.89 %, a las temperaturas de 140°C y 180°C,
respectivamente.
La posterior ultrafiltración/diafiltración permite la concentración, separación y
purificación del hidrolizado. Se emplearon tres membranas con corte molecular de
30, 10 y 1 kDa. Los productos se caracterizaron por su alto contenido en
hemicelulosas y pectinas. Los retenidos en la membrana final de 30 kDa obtuvieron
una pureza del 100%, mientras que los permeados fueron del 89.5 y 67.1 %.
This work focuses on the revaluation of discarded carrots, with the objective of
reducing the waste and the environmental impact generated by its accumulation.
Hydrothermal extraction is applied to the carrot pulp to obtain hemicellulose and
pectin. The process is carried out at pilot scale with five reactors in cycles, operating
at temperatures of 140 and 180°C. We study the influence of operating in cycles, of
the time and of the extraction temperature. The performance of the extraction of
arabinogalactans is found to be 73.18 and 94.01 %, while for pectins it is determined
to be 9.09 and 8.89 %, at temperatures 140 and 180°C, respectively.
The subsequent ultrafiltration/diafiltration allows the concentration, separation and
purification of the hydrolized. For that, three molecular cutting membranes of 30, 10
and 1 kDa were used. Products were classified according to their high content in
hemicellulose and pectin. The products retained by the final membrane of 30 kDa
obtained a 100% purity, while the purity acquired by the permeates was 89.5 and
67.1%.
