Necesidades de los celíacos y carencias en la oferta “sin gluten”

Las personas que sufren la enfermedad celíaca se ven en la necesidad de
eliminar el gluten de su dieta de manera permanente, ante la ausencia de un
tratamiento que les permita digerir esa proteína. Por ello, existe en el mercado
una oferta de productos fabricados específicamente “sin gluten”. El presente
proyecto realiza un análisis de esta oferta y, desde el punto de vista del celíaco,
se exponen las grandes deficiencias que presenta este mercado en materia de
precios, disponibilidad y accesibilidad. Se plantean propuestas para lograr que
las personas celíacas dispongan de una oferta de productos que sólo se
diferencie de la oferta con gluten en la ausencia de la proteína, acabando con
el sentimiento de insatisfacción generalizado entre los celíacos.
People who suffer from celiac disease must exclude gluten from their diet, in the
absence of a treatment that allows them to digest that protein. For this reason,
there is a supply on the market of products specifically manufactured as "glutenfree". This project analyzes this supply and, from the celiac person’s point of
view, the serious shortcomings that this market presents in terms of prices,
availability and accessibility are exposed. Proposals are made to achieve that
people with celiac disease have an offer of products that only differs from the
offer with gluten in the absence of the protein, by ending the feeling of general
dissatisfaction among celiac people
