El presente trabajo trata de desentrañar las complejas relaciones existentes a finales del Antiguo Régimen entre la teoría política que limitaba y moderaba el cambio económico, y la praxis ejercida por los propios agentes impulsares del comercio. El ejemplo estudiado es el del abasto del aceite de oliva en una localidad castellana -Astudillo-, que destacaba por ser una de las principales fábricas textiles laneras de la Meseta Norte, y por ende, un gran centro consumidor de aceite de oliva. Gracias a la documentación referente a su Almacén municipal de aceite se ha podido estudiar el cambio operado en la organización del abasto de dicho elemento entre 1779 y 1832.
The present work tries to unravel the complex existing relations at the end of the Old Regime between the political theory that it limited and it moderated the economic change, and praxis exerted by the own impelling agents of the commerce. The studied example is the one of the supply of the olive oil in a Castilian locality -Astudillo-, that emphasized being one of the main laneras textile factories of the North Plateau, and therefore, a great consuming olive oil center. Thanks to the documentation referring to their municipal oil Warehouse have been able to study the change operated in the organization of the supply of this element between 1779 and 1832.
