Resumo
Peñafiel is a town with an important traditional excavated winery complex at the hill where the Castle is located, in contact with the urban nucleus. The objective of this research work lies in giving value to the wineries complex as ethnographic heritage by the study and analysis of a sample of them, in particular the communal winery called “La Pólvora". These wine caves are excavations in the subsoil as a result of a constructive-subtractive process. Many of them are preceding the fourteenth century, although the boom in wineries, -its construction and the possible enlarging of the existing ones-, took place during the eighteenth century. Nowadays wineries are no longer used for wine production, except a few. In order to guarantee the protection of the wineries, it will be necessary to regulate the interventions in them and in their surroundings. In the conclusion of this research, some recommendations are provided.
