Análisis de los problemas derivados de la enfermedad celiaca

Abstract

El mercado de las dietas especiales abarca diferentes ámbitos de los sectores del ocio y la alimentación y, pese a ofrecer múltiples oportunidades de negocio, está poco estudiado. Precisamente, este trabajo es una primera aproximación al análisis de un tipo concreto de dieta, la dieta sin gluten, generalmente asociada a la enfermedad celiaca. Para llevar a cabo este estudio, se ha realizado una búsqueda de información a través de diferentes medios y se ha completado mediante una recogida de datos primarios. Además, debido a la disparidad de limitaciones a las que se enfrentan los celiacos diariamente, se ha tratado de clasificar a estos individuos para así, identificar distintos grupos. Los principales resultados que se obtienen, revelan el desconocimiento de esta patología por gran parte de la sociedad, exponiendo la necesidad de darle visibilidad y concienciar sobre ella. De esta manera, se podría reducir el trato desigual que afecta a estas personas en cuanto a la dieta que han de seguir para no sufrir los efectos negativos que causa la ingesta de gluten en su organismo.

The market for special diets reaches different areas of the leisure and food sectors but, despite offering multiple business opportunities, barely any studies have been elaborated on this topic. In effect, this dissertation is a first approach to the analysis of a specific type of diet, the gluten-free diet, which is generally associated with celiac disease. To carry out the research for this dissertation, information was obtained by means of different tools and was completed with a collection of raw data. Furthermore, and due to the range of limitations faced by those who suffer a celiac disease on a daily basis, this dissertation seeks to classify these individuals in order to identify different groups. The obtained main results reveal the lack of knowledge on this pathology by a large part of society, exposing the need to give it visibility and raise awareness about it. Thus, the unequal dietary requirements that affect these people could be reduced in order not to suffer the negative effects that gluten ingestion causes in their body.
